Grilled Meatball Sandwiches

Today marks three weeks we've been living in a 29 foot RV camper trailer on the farm! It's been fun and challenging all at the same time. For the most part, we do everything we usually do, just in a (much!) smaller indoor space. The best part is when the weather is nice, we can be outside enjoying the views, doing school, chores and eating. 

Cooking inside the camper is a bit more tedious than grilling outside. So, I've been modifying many of my go-to recipes for the grill. Last night, we had grilled meatball sandwiches. These turned out really great!

Grilled Meatball Sandwiches 

1lb HCC ground beef

2 eggs

1/2 cup parmesan cheese

1tb italian seasoning

1tsp garlic powder

1/2 cup pasta sauce

1 cup shredded mozzarella cheese

Salt and pepper to taste

Preheat the grill to 400 degrees.

Line a baking sheet with foil. Mix ground beef, eggs, parmesan cheese and seasonings and form into 2 inch meatballs. 

Add the pasta sauce to the foil and lay the meatballs on top. Add the mozzarella cheese to the top of everything and fold the foil up into a packet.

Cook on the preheated grill for 30 minutes or until internal temperature of the meatballs registers 160 degrees. Serve on buttered and toasted rolls with extra pasta sauce for dipping.

  • SO excited for you guys. One of our favorite camping meals are “hobo sacks”. Put your favorite cut of beef along with seasoning and butter on top of diced potatoes. Throw it on the fire and cook until done. We also love kielbasa, peppers, potatoes, and onions served the same way.
